New Month, New Theme... And It's Recipe-Based!

Following on the success of last month's all-Dublin posts (if only in my opinion!), I've decided to keep up a theme each month going forward. This month? All my recipes will be gluten-free!

Why, you ask? Besides having a few friends that necessitate a gluten-free regime and the opportunity for a challenge, the real reason I must admit is that I am a sucker for any food trends that come out of Whole Foods and show up in Trader Joe's. Yep, and I am not even ashamed to admit it! So here we go.

First up, POLENTA. I have been experimenting with this ground cornmeal for a few months now and I love the fact that Polenta is filling and versatile. Here's what I whipped up tonight; it's got some slightly bitter broccoli rabe mellowed out with a healthy dollop of ricotta cheese and some amazing Soy Chorizo a la Trader Joe's (back on the shelves woop!).

Broccoli Rabe and "Soyrizo" Polenta
Serves 1-2

1/4 cup Polenta
3/4 cup water
1 heaping tablespoon Ricotta cheese
2 tablespoons coconut oil
1 large handful broccoli rabe, roughly chopped
1/2 red onion, diced
1 garlic clove, thinly chopped
1/4 link of Soy Chorizo
1/3 cup crumbled Bleu cheese
salt, pepper to taste

In a medium saucepan, pour dry Polenta and add the water and 1 tablespoon coconut oil. Heat over low heat, watching carefully as Polenta congeals very fast (within minutes!)

Simultaneously in a large wok or deep frying pan, heat the second tablespoon of coconut oil. Throw the broccoli rabe, onions and garlic in, stirring to coat all. Heat over medium to soften the rabe and onions. Add the chorizo, making sure to take out of the casing, and stir all together.
Pure gluten-free deliciousness in the makings!
Back to the Polenta: add the ricotta and season with salt/pepper. Make sure the Polenta has cooked all the way through before stirring in the broccoli rabe and chorizo mixture.

Plate up and sprinkle with the Bleu cheese. Enjoy your gluten-free delish dish!
